Curry In A Hurry(Vegan)!

Inspired by Jessica's of 'Dairy-Free Betty'  simple recipe, one just had to recreate it! It's a simple recipe created for busy moms that's ideal for family, friends & unexpected guests to enjoy(thanks Jesica:).

* can of coconut milk
* can of chickpeas
* 1C frozen peas
* half a bag of spinach
* 1 heaped TS(that's the big one:) of medium curry pwd(I used Swartz)

Makes a very mellow(thx to the milk:), quick, tasty & cheap meal for all the family to enjoy(lo's love it:)!

Method

Place the milk & curry pwd in a saucepan to boil & simmer for 10 minutes.

Add the veggies and simmer to a desired temperature suitable for you.

Enjoy!
